Happy Saturday! One of the things I’m trying to do better this year is MEAL PLANNING! I think this will help me stay on track with my health goals AND save money in the process. So this weekend, I sat down and created a flexible meal plan for the week ahead and will adjust based on our schedule and what we have going on.
Sunday: Stuffed Steak (recipe coming courtesy of Jim!)
Monday: Family Pizza Night (YAS!)
Tuesday: Turkey Smoked Sausage Cheddar Pasta (InstantPot)
Wednesday: Lemon Garlic Chicken (InstantPot) — paleo friendly
Thursday: Leftovers
Friday: Mocha Rubbed Beef Roast (InstantPot) — paleo friendly
Saturday: Curry Chicken (InstantPot modified)
As you can see, I love my InstantPot just a wee bit. It will make meals simple to make and ready to go. Breakfasts will be shakes/smoothies for me and cereal/pancakes/waffles for the boys. Lunches will be leftovers or salad for me.
Overall, the week should be pretty simple and I’m excited to start trying new flavors! Plus, planning ahead REALLY helps when I go to the grocery store and I think that will make a big difference!
