Winter is admittedly not one of my most favorite times of year, but I do love the thought of hunkering down, bundling up, and firing up the oven for fresh baked goods. Winter often seems like the time where time stands still and having fun (and delicious!) things to do definitely helps! After our first snow recently, I asked some Facebook friends for their FAVORITE cookie recipe and one of them shared a gem with me that I immediately set out to make (and one that I’m sure you have almost everything already to make them.

I present to you: Snowball Cookies (with mini chocolate chips).
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon salt
1.5 cups of mini chocolate chips
Powered sugar for rolling afterwards
Preheat oven to 375 degrees. Mix butter, powdered sugar, and vanilla until fluffy. Add flour and salt and mix until the dough slowly starts to come together. Stir in the chocolate chips.
Scoop dough onto cookie sheet (I use Pampered Chef scoop which is the perfect size and shape). Bake cookies for approximately 8 minutes.
Remove and let cool for just a bit and then toss in powdered sugar until coated.
