If you know my son, Jack, then you know that he is OBSESSED with all things minions. We even found a pair of his old footie pajamas that were a big Minion and we simply HAD to cut the feet off so he could wear them another year. So when Minions came out this past summer, we were the first in line to see it! As a mom, I was stoked because Illumination Entertainment is the same film production company that created the Despicable Me franchise, so I KNEW this flick would be just as adorable and it was!
So when the Blu-Ray/DVD of Minions was set to hit the stores, the boys and I knew we had to snatch it up! If you don’t know anything about the film, it basically follows the minions throughout history and discusses where they came from and how they get into mischief over the years.
As an homage to that, I thought for our family movie night with our new DVD, I would create two time-inspired recipes for easy munching while keeping up with our goggle-eyed friends.
Prehistoric Chicken Legs
Your kids will love eating like a caveman with these prehistoric eats! You will need:
Chicken legs
Salt
Pepper
Olive Oil
Red pepper flakes
Garlic powder
Preheat oven to 425 degrees. Sprinkle spices and drizzle olive oil on chicken legs. Bake for approximately 40 minutes or until cooked through and skin is crisp. Serve alongside Minions to spice things up!
Roasted Cauliflower Hummus
If you’re ready to walk like an Egyptian and run alongside the minions and the pyramids, then this dip with a twist is for you. You will need:
2 cups of raw cauliflower
1 tub of your favorite hummus
Red pepper flakes
Salt
Pepper
Sesame seed oil
Preheat oven to 425 degrees (you can do this alongside your chicken legs). Drizzle sesame seed oil and spices on cauliflower and bake for approximately 30 minutes until soft.
Blend cauliflower together with your hummus mixture and serve alongside your favorite raw veggies, pita chips, pita bread, crackers, or pretzels. This is great for munching along and you can feel great about serving it also!
