Every year, around Christmastime, we love to put little baskets together with the essentials for a delicious family breakfast during the holidays. Think pancake mix, syrup, and Wright® Brand Bacon – the perfect breakfast fixings. The season is busy, so spending time around the breakfast table is a great way to reconnect and have that essential family time during the hustle and bustle of the holidays.
In honor of our yearly tradition, I thought I would put together a new sweet and savory pancakes recipe that is perfect treat for those family breakfasts.
Dark Chocolate Bacon Pancakes
For this recipe, you will need:
24 oz. package of Wright® Brand Bacon Applewood variety
1 1/4 c. all-purpose flour
1/4 c. cocoa powder
3 tbsp. sugar
1/4 tsp. salt
2 eggs
1 1/4 c. milk
2 tbsp. melted butter
1/2 cup dark chocolate chips
While assembling your other ingredients, bake your Wright® Brand Bacon on a baking sheet in the oven. I love this method because this thicker, heartier sliced bacon crisps up nicely and maintains that expertly crafted robust smoke flavor. I like to bake up the entire 1.5 pounds package of bigger, better bacon, not just for the pancakes, but for everyone to enjoy on the side as well (or in this recipe, chocolate-covered).
Next, combine your dry ingredients (sugar, flour, cocoa powder, salt), then whisk together with your wet ingredients (eggs, milk, melted butter, vanilla) to create your chocolatey pancake batter. Once combined, begin to cook on a medium-heat oiled skillet and top with crumbled cooked bacon.
Next, melt some dark chocolate chips and coat bacon slices partially in chocolate. Let set.

Take the remaining melted dark chocolate and mix with equal parts maple syrup for the perfect pancake drizzle.
Top each sweet stack with Dark Chocolate Maple Syrup drizzle, dark chocolate chips, and extra bacon. These dessert for breakfast pancakes will be the hit of your next family together time.
