With the holidays around the corner and a major bathroom renovation in the works, we are trying to save money where we can. One of the simplest ways we’ve found to do this is to prepare larger meals on the weekends with the intention of having leftovers for lunches and dinners throughout the week. Jim works in an office that has access to a microwave and lunchroom, so that makes it pretty easy for him to grab and go during lunchtime. Not to mention, planning ahead helps us to stay on track with healthy eating because we know exactly what we are packing for our daily lunches in our Reynolds™ heat & eat containers!
Our favorite go-to meal on the weekend usually involves incorporating the grill. With beautiful weather on Sunday, we took the opportunity to grill up some boneless, skinless chicken thighs for my grilled chicken with mango salsa with coconut-infused rice recipe.
I seasoned the chicken with just a little bit of garlic powder and my favorite barbecue rub. Jim took care of the grill which gave me the time to prep my Mango Salsa inside.
Here’s what you’ll need:
2 fresh mangoes
3 plum tomatoes
1/2 purple onion, diced
1 jalapeño, diced
Dash of salt
I love this recipe because it is SO simple to put together and works well with tortilla chips, over chicken, or folded into rice for a great weekly meal. Not to mention, it takes virtually no time to put together so we can enjoy fresh ingredients, even on those busy days.
While I’m putting together the salsa, I also boiled and prepared my rice. I added a few splashes of coconut oil to get that delicious flavor infused that will complement the chicken and salsa nicely. Prepare as is typical for you.
Once finished, slice your grilled chicken over the rice and serve topped with your mango salsa.
Because we had leftovers of this simple recipe, I decided to prepare a few lunches for Jim to enjoy throughout the week. I pulled out my Reynolds™ heat & eat disposable containers.
