With the crisp air and falling leaves, fall has always been my absolute favorite season. Whether it’s celebrating my birthday (oh hey, October) or the wafting smells of pumpkin pie baking in the oven, fall is all about comforting sights, sounds and smells for me. This year, our family made a Hello, Fall List and we are trying our best to complete that list before the fall season ends! One of my favorites? Bake something with pumpkin as part of the recipe. Enter these Chocolate Swirl Pumpkin Cheesecakes.
The smell of these little sweet treats will remind you of a simpler time, filled with comfort foods and sweetness. To make these special treats, the process is relatively simple, and makes a beautiful marriage between two complementary flavors – pumpkin and chocolate.
First, gather the ingredients you will need to make this fall-inspired deliciousness (full recipe below).
Combine dry ingredients with cream cheese and whip until combined. Then, add in the heavy cream, eggs, and sour cream. The mixture will seem thin and slightly bubbly – this is perfectly okay! Next, add your pumpkin pie spices and one can of pureed pumpkin. Lastly, while your ingredients are mixing together, place chocolate sandwich cookies in the bottoms of eighteen cupcake liners.
Once your mixture is combined, pour into each cupcake liner over the cookie. Then, the swirling technique requires a bit of finesse. Melt dark chocolate chips with some heavy cream after heating in the microwave. Drizzle over each cup and use a toothpick or skewer to swirl. The design is up to you! This was extremely therapeutic to me. Not to mention, the whispers of pumpkin filling my kitchen? Yes, please.
Once you’ve swirled each cup, pop into the oven and bake at 300 degrees for 40 minutes or until a toothpick comes out mostly dry. Let cool completely. Once they were cool, I placed them in my refrigerator for further firming. After they have cooled completely, the Chocolate Swirl Pumpkin Cheesecakes are ready to enjoy!
I used festive candy-corn wrappers for serving, but you can also leave them bare, so guests can enjoy the full range of chocolate sweetness.
Let’s get baking!
- 18 Chocolate Sandwich Cookies
- 8 ounces cream cheese, softened
- ⅔ c. granulated sugar
- ⅓ c. light brown sugar
- Salt
- 2 eggs
- ⅓ c. sour cream
- ⅓ c. heavy cream
- 1 15-oz. can of pureed pumpkin
- 1 tablespoon of pumpkin pie pieces
- ½ c. dark chocolate chips
- 3 tbsp. heavy cream for chocolate swirl
- Preheat the oven to 300 degrees and line 18 muffin cups with liners.
- Place 1 whole cookie in the bottom of each cup.
- Beat cream cheese, sugars, and salt until smooth.
- Beat eggs in one at a time to combine.
- Beat in sour cream and heavy cream.
- Stir in pumpkin puree and pumpkin-pie spice.
- Divide amongst cookie paper cups.
- Melt chocolate and remaining heavy cream.
- Drizzle and swirl over each cup.
- Bake until the filling is set, 40 minutes or so.
- Cool completely.
