It’s no secret that my husband hates milk. After having issues with the lactose when he was a child, he has since spent most of his time avoiding it like the plague and in turn missing out on some major nutritional benefits. Since I’m all about versatility , in addition to the traditional methods of incorporating almond milk – think smoothes, for drinking, in shakes – I put together a recipe that is a perfect reflection of the fall season and gives that extra boost in the morning to start the day off. The Fall weather brings about the sight, scents, and smells of all sorts of deliciousness from crisp apples to creamy pumpkin. Pumpin Pecan pancakes made with almond milk have a way of reflecting the season and filling up bellies in the most delicious way.
The full recipe can be found below to create this fall masterpiece, but I encourage you to stop what you’re doing and make these RIGHT NOW. The ingredients are pretty simple and you likely have most of them in your cupboards already.
One of the most important steps in the process is to add in your Orgain Organic Protein Almond Milk® {“What Almond Milk Should Be” ®} AND to make your pancakes extra versatile, split the batter into two batches, prior to the pumpkin step, and cook basic pancakes to be used in other ways. I love that I can create plain or specialty pancakes based on the same batch just by splitting the batter. I used the unsweetened vanilla version for that extra flavor boost and with 10g of protein, these pancakes pack a protein punch. Vitamin and plant-based calcium are also great additions to the morning repertoire.
Once you’ve added your pumpkin and whipped up your pumpkin pancakes, candy some pecans to add some extra flavor. For one cup of pecans, I added a small pat of butter and 1 tbsp. of brown sugar and tossed in a skillet until coated. YUM!

- 1 cup all-purpose flour
- 2 tbsp. sugar
- 2 tsp. baking powder
- ½ tsp. salt
- 1 cup of Orgain Organic Protein Almond Milk®
- 2 tablespoons unsalted butter, melted
- 1 large egg
- ½ cup 100% pumpkin puree
- 1 c. pecans
- 1tsp. butter
- 1 tbsp. brown sugar
- Melt 2 tbsp. butter and whisk together with dry ingredients (flour, baking powder, salt, sugar).
- Whisk in egg and 1 cup of Orgain Organic Protein Almond Milk®.
- Divide batter.
- Mix ½ cup pumpkin puree into one half of batter.
- Bake pancakes on a heated, oiled skillet.
- Candy pecans on the stovetop with butter and brown sugar.
- Layer pancakes in your favorite flavor combination.
Delicious, right? Remember, that plain batter that we set to the side to create basic pancakes for use in other ways? I added some fresh fruit and layered to create a Triple Berry shortcake effect.
