Summertime means grilling and it is absolutely one of our favorite ways to prepare our food. While I am no grillmaster, my hubby and I seem to make a great team – I think and prepare the recipe and he does the grilling and assembling. We love to try new things on the grill, but we also love the classics – such as burgers! In an effort to spice things up a bit, we decided to kick it up a notch and add some La Morena chipotle peppers into our burger blend and jalapeños into a guacamole that cools things down as it heats them up. These subtle changes take this all-American classic and gives it a tasty heat!
To create these for your next family barbecue, you’ll need to assemble the burgers, grill them, and then put together your guacamole. Let’s start with the burgers. You’ll need: 1 pound of ground beef (85% lean is perfect for juiciness), 1/4 cup ranch dressing, 1/4 cup oats, 1/2 cup flaxseed cornmeal, 1/4 cup barbecue sauce, 1 can of La Morena chipotle peppers in Adobo Sauce, 1 egg and spices to your taste.
Top your ground beef with your cornmeal, oats, ranch, and barbecue sauce. Then, dice your chipotle peppers and pace them into your mixture, adding in some of the Adobo sauce as well which will serve to flavor the burgers even more. Then, add your egg and your mixture of spices (we like garlic, salt, pepper, a barbecue rub, and onion powder). Roll your burgers into a ball to take shape and place on wax paper until ready to serve. This pound mixture made about six hefty-sized burgers.
While you’re assembling the burgers, fire up the grill. We prefer charcoal, but the recipe will work on whatever grill you have. Place on grill to begin searing and cooking process. When forming the burgers, use your thumb and create a well thumbprint. This will help the burger to retain flavor and juiciness as it pools there. Grill burgers until desired doneness has been achieved.
While your burgers are cooking (which will not take long), you can put together your guacamole. These steps are why it is great if you are able to tag-team cook and assemble these bad boys. For your spicy guacamole, you will need La Morena jalapeño peppers, 4 avocados, diced red onion and tomato, salt, pepper, garlic powder, and the juice from one lime.
Remove your peppers from the can and dice finely. Scoop out your avocados reserving one pit, combine, and mash together. I find that a potato masher does the trick! Then, fold in your tomatoes, onions, spices and lime juice. Place pit in bowl of airtight container to help keep guacamole fresh.
Voila! You’re ready to serve.
By this point your burgers should be finishing up and you can toast your buns. I coated each side of the bun with Coconut Butter and grilled until they were crisp (just a few minutes). You can then set to work to assemble your creations!
I placed one burger on each bun, topped with pepperjack cheese for extra oomph, and a heaping serving of our guacamole. The flavors work together to keep things nice and spicy and the guacamole helps to cool things down a bit. These burgers are so flavorful that no other condiments are required.
You can see those bits of La Morena chipotle peppers and the adobo sauce flavor is throughout. Doneness for your burger is your preference.
