Earlier this year, while on a road trip, we stopped at my cousin’s house in Georgia. With two little growing boys in tow, my cousin did the logical thing and asked about their favorite snacks and treats. To our surprise, we showed up to a stocked kitchen with fairlife. Having never even heard of it, I grabbed a glass for myself and quickly gulped down the most delicious tasting milk I had ever had. Fast-forward a few months later, I found fairlife in my local Kroger store and found they carried both chocolate and white milk varieties – we were hooked!
With two growing boys and a husband that works and works out hard, the benefits of fairlife are a great addition to our weekly menu. With 50% more protein and 30% more calcium than regular milk, the boys of our crew get those benefits without needing powders AND while getting less sugar. Even better? No artificial growth hormones. As a mom, this makes my heart happy. As an added oomph, I decided to create protein-packed Chocolate Milk Pancakes – perfect for breakfast on the go, sleepy Saturday mornings, or for Sunday brunches.
First, start with quality ingredients like fairlife. With a few simple ingredients, you can create the perfect breakfast for fueling those little bodies (full recipe below)!
Mix them up with a big heaping bowl of warmed chocolate milk that’s been ultra-filtered. This process helps to concentrate milk and its goodness – emphasis on the protein and calcium and filtering out the sugars! Just what this mom wants to hear.
Time for baking! We like to pull out our family sized griddle – more pancakes ready at once. We used a 1/4 measuring cup and created silver-dollar sized pancakes. This recipes will make about 20 pancakes of that size.
Make sure they are golden brown on each side and cooked throughout. While you’re cooking up your pancakes, you can also mix up our homemade chocolate maple syrup. You’ll need 1/2 cup semisweet chocolate chips, 3 tbsp. butter, and 1 cup of pure maple syrup. Melt the chocolate chips and butter over low heat until melted. Combine with syrup for a delicious sweet eat! Store chilled in an airtight container.
Time to serve up your hotcakes! Top with a small tab of butter and pour over your syrup. We created a taller stack since they are silver dollar size.
You might even serve them with a side of ice cold fairlife.
Enjoy this protein-packed breakfast – the perfect morning pick-me-up!
- 2 cups fairlife chocolate milk
- 2 eggs
- 1 tbsp. coconut oil, butter infused
- 1 cup flour
- ⅓ c. flaxmeal
- ⅓ c. wheat flour
- ⅓ c. rolled oats
- 1 tsp. salt
- 3 tsp. sugar
- 2 tsp. baking soda
- 2 tsp. baking powder
- Combine dry ingredients.
- Warm 2 cups of fairlife chocolate milk. Whisk in eggs and coconut oil until incorporated.
- Combine wet and dry ingredients until mixed.
- Heat griddle and use a ¼ measuring cup to portion silver dollar pancakes. Cook on greased griddle until brown on both sides and cooked throughout.
For a slight variation on these pancakes, add in layers of strawberries. For the boys, I kept the traditional version, but I like a little oomph, so I used the same pancakes and created a “Chocolate-Covered Strawberry” variety. Start with your pancakes and fresh strawberries, cut.
Drizzle with chocolate maple syrup and voila! A sweet, fruit-layered breakfast!
