Two things I absolutely love about summer are fresh produce and the grill! Combining these two to create a delicious recipe is usually at the top of my list, especially one that is as versatile as soup. The great thing about summer soups is that you can create them in large batches with those tastes of summer and fresh vegetables and then freeze them to enjoy in the winter months. All it takes is a little Swanson Chicken Broth as your soup foundation and the rest of flavors will fall into place. You’ll be summer souping it up in no time!
One of my favorite summer soup recipes to put together is a Roasted Corn Chowder. Full of flavor and fresh produce, this chowder incorporates summer flavors, but also has the heartiness of your favorite winter stew. Make a big batch and then freeze for later. Or just eat throughout the week like I do…
The first step is to select quality ingredients that create flavors that work well together. For this recipe, I used Swanson 100% Natural Chicken Broth, fresh produce such as corn, red peppers, onions, red potatoes and jalapeños for a little heat, half & half and butter.
I love this broth because it offers the flavor as if I had slow-cooked my own bone broth, but without all the extra work. Even better, it’s 100% natural, 99% fat free, AND is currently available in a 6-pack at Sam’s Club which means you can stock up for the school year. Swanson is a great pantry staple to have on hand as it goes with just about anything you plan to make for dinner!
Next, clean your corn and remove all hair and husks. I boil my corn for about 5 minutes or so, just to start the cooking process. Then, I add my corn, peppers, and jalapeños to the grill for a nice charring and softening.
See that beautiful rich color? That’s a sight of summer for sure!
Dice up your vegetables, including your onion and sauté in about 3 tbsp. of butter until softened. Add 2 tbsp. of flower and stir around to thicken. You’ll then need about 2/3 of a 32 ounce box of Swanson Chicken broth. Then, add in your diced, cooked red potatoes.
The result will be the start of this creamy deliciousness and flavors marrying to create a recipe that your whole family will love.
The last step is to add the half & half and stir until incorporated and starting to bubble and thicken. The end result is best served with a garnish of bacon and enjoyed as the summer sun shines on your backyard! Bon Appetit!
You can see the layers of flavors – this Roasted Corn Chowder is sure to be a hit! I bet you won’t even have any left to freeze.
- 4 ears of corn
- 2 red peppers
- 2 jalapeños
- ½ yellow onion, diced
- 6 red potatoes, cooked and diced
- 1 box of Swanson Chicken Broth
- 3 tbsp. butter
- 2 tbsp. flour
- 3 cups of half & half
- Bacon for garnish
- Roast corn, red peppers and jalapeños on grill until lightly charred.
- Saute corn, peppers, and onions until softened in three tablespoons of butter.
- While those are cooking, cook your potatoes and dice. I used my microwave, but boiling will work also.
- Add 2 tbsp. of flour and stir until incorporated and beginning to cook.
- Add ⅔ of a box of Swanson Chicken broth and let thicken.
- Incorporate diced cooked potatoes.
- Add 3 cups of warm half & half and stir. Let soup thicken and begin to bubble.
- Serve garnished with bacon. Bon Appetit!
