School is officially out for the summer and the halls are alive with the sound of squabbling! While the boys are occupied with a stack of blocks or engaged in a lengthy art project, I like to take a few minutes of ME time and sip a cup of McCafé coffee made with 100% Arabica beans. The boldness and variety of flavors make this coffee the best Summer day starter I could sip.
Throughout the school year, I often find myself racing through a cup of McCafé coffee on the way to our day’s activities. Now that summer has arrived, I can relax over a hot cup of java and take a little time for myself. By brewing my own cup of coffee, I can save time and money! With single serve options as well as bagged choices, you can also serve guests a cup when they come over to enjoy a playdate! I love serving coffee with friends because it makes my premium coffee that much more enjoyable.
With the arrival of guests or even just for an afternoon pick-me-up, I baked a batch of Double Chocolate Coffee cookies. These light and airy, but super chocolatey cookies incorporate McCafé coffee giving them a vibrant and intense flavor.
These cookies are relatively simple to put together, but do require some special steps. The full recipe is below.
Ingredients, including French Roast McCafé coffee. This blend is particularly bold and once brewed makes the perfect addition to your cookie dough.
The recipe calls for one cup of butter (two sticks). One stick of butter should be melted and frozen until it begins to harden slightly. The other stick should be left out to get to room temperature.
This butter is from the freezer and slightly solidified. If it’s too hard, microwave briefly to get the butter workable again.
McCafé coffee is harvested from the rich soils and mountainous regions of the foremost coffee-growing areas of the world making it rich and full of body – just the right amount of oomph you need to get the day started! I brewed a cup and used three tablespoons for this recipe. The rest of the coffee went into a mason jar in the refrigerator for a cold brew and possibly for use in a later recipe.
Voila! In my second batch, I used McCafé coffee Breakfast Blend bagged coffee and had the same result: delicious, moist Double Chocolate Coffee cookies.
- 1 cup of butter
- 1.5 cups of white sugar
- 1 tablespoon of vanilla
- 2 eggs
- 3 tablespoons of McCafé Brewed Coffee
- 2 and ⅔ cups of all purpose flour (may need more if too sticky)
- ½ cup of cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1.5 bags of chocolate chips (yes, a whole bag, plus half of one)
- Melt one stick of butter and freeze until slightly hardened (about 20 minutes). Let the other stick of butter soften to room temperature.
- Preheat the oven to 350 degrees.
- Mix together the butter, sugar, vanilla until blended.
- Mix in eggs until incorporated.
- Combine dry ingredients (flour, cocoa, baking soda and salt) and mix well with the butter, sugar and vanilla blend.
- Slowly mix in coffee, one tablespoon at a time. Add more flour as needed.
- Stir in chocolate chips.
- Bake for 10-12 minutes each until slightly set and let cool.
- Serve warm with a glass of ice cold milk.
As an added bonus, you can use what you already have on hand to create delicious Coffee Cookies & Cream milkshakes!
Blend together 1/2 cup of your chilled McCafé coffee, 7 ice cubes, 1 scoop of vanilla ice cream and two Double Chocolate Coffee Cookies. Blend until desired consistency, adding more vanilla ice cream if necessary.
Serve with another cookie as a topper. Striped straws recommended, but not required. This cool coffee treat is the perfect afternoon sweet treat to use up that leftover coffee and beat the summer heat.
Snag your own McCafé coffee at your local Walmart store. McCafé coffee had a series of demonstrations at local stores last weekend and customers had an opportunity to try out the new coffee line. You can see that I am ready for summer (and for sweet sips!)
Find McCafé coffee in the coffee and beverage aisle of your local Walmart, including the bagged and single serve varieties.
Buy them all and prepare to have a few more relaxing moments to yourself!
