Cranberry & Chocolate Quinoa Granola Bars
Adapted from Vanilla & Spice
Dry
1.5 cups whole wheat flour
1 tsp cinnamon (LOVE cinnamon – I DUMPED it in!)
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
Wet
1 whole mashed banana
2/3 cup unsweetened applesauce
2 tbsp honey
2 tsp vanilla extract
Extras
1.5 cups cooked and cooled quinoa
1 cup rolled oats
1/2 cup dried cranberries
Preheat oven to 375° and line a 13 x 9 pan with parchment paper (this is AMAZING for clean-up!)
Mix together dry ingredients in one bowl. Mix together wet ingredients in another. Combine the two together in one large bowl (I used my Kitchen-Aid mixer which was beyond simple & quick! Fold in the “extras” until mixed well. Spread evenly into the prepared baking pan.
Bake for approximately 12 minutes or until toothpick comes out clean.
Makes 24 traditional granola-sized bars
