Did you know it’s Pi Day (3-14)? Are you planning to have any pie today?
In honor of this magnificent day (and EIGHTY degree temps in Chicago…in March today – w00t, w00t!), I decided to make a batch of Apple Pie Pancakes. It’s a recipe I improvised based off of a standard pancake mix recipe.
Apple Pie Pancakes
Ingredients:
1 c. flour
1 tbsp. baking powder
1 tbsp. sugar or brown sugar
1 tsp. of salt
1 egg
1/2 c. natural applesauce
Add milk until desired consistency
Cinnamon
Steps:
Mix all of the dry ingredients together, then whisk with egg and applesauce. Add milk (whatever you have on hand) until desired consistency for pancakes. Add a dash (or a lot more) of cinnamon. I LOVE cinnamon!
Serve warm with some white chocolate chips you had leftover somewhere in your refrigerator and a sprinkle of cinnamon and brown sugar. Cut it up and watch the little ones devour it and ask for seconds….and thirds!
And why yes, that’s a face on the plate underneath. Charlie received that for Christmas two years ago and it’s SO cute!
